High on the volcanic slopes of Mount Batur lies Dausa Village, part of the celebrated Kintamani region in Bali. At elevations up to 1380 meters, coffee flourishes in terrain shaped by ancient lava flows, enriched by mineral-dense soils, and cooled by crisp mountain air and steady tropical rains. This is the birthplace of Arabica Bali Kintamani – Natural Process, a coffee that expresses not only its distinctive terroir but also a profound cultural philosophy.
The coffee is cultivated by the farmers of Subak Padang Payung - 31 community members tending 35 hectares of land planted with around 2,000 trees per hectare. Their work is grounded in Tri Hita Karana, the Balinese principle of harmony between people, nature, and the divine. Guided by this belief, farming becomes an act of stewardship rather than mere production. Sustainable practices help preserve both yield and quality, while environmental efforts - such as reusing coffee husks to create organic fertilizer - ensure the soil remains vibrant for future generations. Socially, the community places strong emphasis on empowerment, with women playing a key role in the meticulous post-harvest stages of drying and sorting, ensuring precision and consistency in every lot.
During the harvest, only fully ripe red cherries are hand-selected. After flotation to remove imperfect fruit, they are dried slowly in the mountain air for around 16 days - a patient and delicate process essential to shaping the coffee’s character. This natural method amplifies the sweetness and clarity of the cup, resulting in a clean, well-balanced profile layered with complexity.
